Eleni Zymvrakaki

Eleni Zymvrakaki serves as Laboratory Teaching Staff (LTS), Department of Food Science and Technology, School of Agriculture, Faculty of Agriculture, Forestry and Natural Environment, Aristotle University of Thessaloniki. She has been working at the Aristotle University of Thessaloniki since 2019. She holds a PhD degree (Ph.D) in Nutrition Education. From 1984 to 1987, she worked as a postgraduate researcher in the Biochemistry Laboratory, Department of Organic Chemistry and Biochemistry, University of Ioannina.

From May to December 1997, she attended postgraduate seminars on Science Teaching at the Science and Technology Group, Institute of Education, University of London.

From 1994 to 2000 she was a coordinator and researcher in research projects related to nutrition and health issues funded by the European Union and the Research Committee of the Aristotle University of Thessaloniki. From 1998 to 2010 she worked as fully qualified Scientific Associate, Department of Nutrition and Dietetics, Technological Education Institute of Thessaloniki. From 2000 to 2018 she worked as a Professor of Chemistry in Secondary Education.

She is involving in teaching the courses “Inorganic Chemistry”, “Chemical Analysis in Agricultural Sciences” and in the laboratory exercises “Food Physical Chemistry” and “Food Analysis”. Her research interests focus on the development of analytical methods for the qualitative and quantitative determination of bioactive compounds from extracts of plant tissues and by-products of the food industry. Her research is mainly focused on the use analytical techniques: Ultraviolet-Visible Spectroscopy (UV-Vis), High Pressure Liquid Chromatography (HPLC) and Gas Chromatography (GC-MS, GC-FID). She has published 11 research papers in international and Greek peer-reviewed journals, 2 publications in conference proceedings and a book chapter.
