Lazarides Charalampos Emeritus Professor

Charalampos (Harris) Lazarides is Emeritus Professor of Food Process Engineering in the Department of Food Science & Technology at Aristotle University of Thessloniki, with active role in teaching Food Engineering courses as a pensionist (since 2017). He served as Department Head (2006 – 2013). He also served for over 20 years as director of the Lab. of Food Preservation and Process Engineering (1996 – 2017). Prof. Lazarides holds a Ph.D. in Food Engineering from the Dept. of Food Engineering, University of Massachusetts, Amherst, MA (1980), an Μ.Sc. in Food Science from the Dept. of Food Science & Nutrition, University of Minnesota, St. Paul, MN (1977) and a Higher Diploma (5-year curriculum) in Agriculture Science from the Faculty of Agriculture, Αristotle University of Thessaloniki, Hellas (1973). He served the food industry for 5 years, before entering Academia. He joined Aristotle University of Thessaloniki as Assistant Professor of Food Process Engineering in 1986 to be elected as a full Professor in 1996. He has been a visiting Professor in the Dept. of Food Engineering, Univ. of Massachusetts (1986, 1987); in the Dept. of Food Science and Nutrition, University of Minnesota (1991); in the Dept. of Food Engineering, Univ. of Sao Paulo, Brazil (2011). His research interests include the development of minimal processing schemes, osmotic pre-concentration and formulation of food, low pressure membrane processing (direct osmosis, ultrafiltration), the development of environmentally viable water and waste management schemes. He has been strongly interested in sustainability along the food supply chains and how it can serve quality differentiation leading to product de-commoditization and protection of small farmer interests. He has participated in many scientific conferences, often as an invited or keynote speaker. He also had an active participation in European Thematic Networks (FOOD Net, ISEKI). Parallel to his academic duties, he has been offering scientific support to National and European consumer movement. He has contributed to consumer education on food issues via numerous publications and presentations in Schools and mass media.-
