Lazarides Charalampos Emeritus Professor

Charalampos (Harris) N. Lazarides is Professor of Food Process Engineering in the Department of Food Science & Technology, Faculty of Agriculture, Aristotle University of Thessaloniki, Greece. He is director of the Lab. of Food Preservation and Process Engineering since September 1996. He also served as Department Head for 6.5 years (Sept. 2006 – Jan. 2013). Prof. Lazarides holds a Ph.D. in Food Engineering from the Dept. of Food Engineering, University of Massachusetts, Amherst, MA (1980), an Μ.Sc. in Food Science from the Dept. of Food Science & Nutrition, University of Minnesota, St. Paul, MN (1977) and a Higher Diploma (5-year curriculum) in Agriculture Science from the Faculty of Agriculture, Αristotle University of Thessaloniki, Greece (1973). He invested 5 years working for the food industry before entering Academia. He joined Aristotle University of Thessaloniki as Assistant Professor of Food Process Engineering in 1986 and he moved up to become a full Professor in 1996. He has been a visiting Professor in the Dept. of Food Engineering, Univ. of Massachusetts, Amherst, MA, USA (within 1986, 1987); in the Dept. of Food Science and Nutrition, University of Minnesota, St.Paul, MN, USA (within 1991); in the Dept. of Food Engineering, Univ. of Sao Paulo, Brazil (within 2011) His research interests include the development of minimal processing schemes, osmotic pre-concentration and formulation of food, membrane processing under low pressure (direct osmosis, ultrafiltration), the development of economically and environmentally viable waste processing schemes for the food industry. He is strongly interested in sustainability along the food supply chains and how it can serve quality differentiation leading to product de-commoditization and protection of small farmer interests (survival). He has participated in many scientific conferences, often as an invited or keynote speaker. He also has an active participation in European Thematic Networks (FOOD Net, ISEKI). Parallel to his academic duties, he has been offering scientific support to the consumer and social movements. He has contributed to consumer education on food issues via numerous publications and presentations in Schools and mass media.
